Pumpkin Bread
A basic pumpkin bread with a cake texture.

- 1-3/4 Cup All-purpose Flour
- 1 Tsp Baking Soda
- 1/2 Tsp Salt
- 1/2 Tsp Ground Cinnamon
- 1/2 Tsp Ground Nutmeg
- 1/2 Tsp Ground Ginger
- 1/2 Cup Unsalted Butter (Softened)
- 1-1/2 Cup Sugar
- 2 Eggs (Large)
- 1 Cup Pumpkin Puree
- 1/3 Cup Water
- 1 Tsp Vanilla
Optional Mix-ins (choose one or more)
- 1/2 Cup Nuts (Walnuts or Pecans)
- 1/2 Cup Chocolate Chips
- 1/2 Cup Dried Fruit (Raisins or Cranberries)
Preheat oven to 350 degrees.
In medium mixing bowl, together dry ingredients except sugar (flour, baking soda, salt, and spices).
In large mixing bowl, cream together butter and sugar until light and fluffy.
Beat in the eggs one at a time until well incorporated.
Fold in the dry ingredients, mixing until just combined.
Pour batter into prepared loaf pan and spread evenly.
Bake for approximately 60-70 minutes.
Cool for 10 minutes and then transfer to a wire rack to cool completely.
